Basic Scones

  • 50g unsalted butter
  • 200g self raising flour
  • 1 tablespoon caster sugar
  • pinch of salt, to taste
  • 1/2 cup (125ml) milk

  • Preheat the oven to 220°C. Line a baking tray with baking paper. Rub the butter into the flour (my kids love to help with this part), until the mixture resembles breadcrumbs. Stir in the sugar and salt.
  • Make a well in the center of the mix and stir in the milk. Stir until the mixture is even and the dough comes together. Turn out onto a floured surface then let the kids help to shape or cut into a roughly about 9 scones, 3-4cm thick.
  • Transfer to the prepared baking sheet. Brush all over with milk. Bake for 15 minutes until golden and cooked through. Cool on a wire rack. Serve warm or cold with delicious Jam and Cream.
