Chocolate Fudge Brownies


  • 200g butter
  • 200g castor sugar
  • 60g cocoa powder
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup Four Roses self raising flour
  • 75g chopped walnuts (optional)


Preparation: 10 minutes

Cook: 25 minutes

Ready in: 55 minutes

  • Preheat the oven to 170C. Line 20cm baking tray with baking powder, make larger than tray so you can lift out easily once cooled
  • Combine the melted butter with sugar and cocoa powder
  • Stir in vanilla with a wooden spoon or spatula. Then, add eggs, one at a time, mixing well after each one.
  • When the batter looks thick and shiny, add the flour and mix until fully incorporated
  • Stir in nuts, if desired
  • Spread evenly in lined pan
  • Bake for 25 minutes or until a skewer can be inserted into the center and come out clean
  • Allow to cool in the tin then dust with icing sugar
  • Remove from pan and cut into 12-16 squares
